Hey @Shaz51 great to see you crank up this thread again. Always enjoyed it. Last night I made a frittata (fancy name for a crustless quiche or egg pie). Very easy to do and quite nutritious.
In an oven dish cover the base with steamed or microwaved sweet potato layer then broccoli layer. Then about a cup of thinly sliced snow peas. Sprinkle over chopped sage and shallots. Mix 7-8 eggs with a tub of sour cream and some milk (about 300ml all together) and add salt and pepper. Pour this mix over everything in the tray and top with sliced tomatoes and grated cheese. Bake for around 1/2 hour at 180 deg C. I served it with baked potatoes but salad is good too.
(You can use any veg at all in the frittata, just pre-cook anything that takes more than 20 min to bake). I like to make sure it has colourful veg in it - orange, green and red in the recipe above.
