Whoops @Gazza75 @Meowmy @greenpea . Here it is.

 

SPICY BLACK BEAN COOKIES!

 

Ingredients

30g can black beans, drained & rinsed

40g (1/3 C) cocoa

2 tbsp coconut oil

1/2 tsp cayenne pepper

salt

3tbsp maple syrup

1 large egg

1 tsp vanilla extract

3 tbsp chopped dark chocolate

1/3 C cherries, pitted & chopped

 

Method

Preheat oven to 190 deg C. Line a baking tray with baking paper.

 

1. Place the black beans, cocoa, coconut oil, cayenne & a pinch of salt in a food processor and blend to combine. Add the maple syrup, egg and vanilla and pulse to incorporate. The batter will be wet but should still hold together. Remove the metal part from the food processor and fold in the chopped choccy & cherries.

 

2. Place spoonfulls of batter onto the tray, then use a damp finger to slightly flatten (makes 8-10 cookies). Sprinkle with a touch more salt.

 

3. Bake cookies for 15 mins, or until the edges start to brown. Set aside to cool, the store in an airtight container for up to a week.

 

Sounds pretty darn interesting - bean based, no flour or butter. Salt & paprika! Haven't made them yet but will give it a whirl, good it only makes 10 cookies so I won't have a huge batch hanging around the house temptong me. Gazza I'm sure you can replace milk choc for dark & it's still pretty healthy.
